- It is used for cooking starch slurry for conversion to dextrin and glucose syrup, complete with retention coil to hold converted syrup for 5~7 minutes
- Steam is injected in metered amounts into the slurry resulting in rapid heat transfer and cook-out of pregelatinized starch molecules and mixing. The mixing is controlled by an internal stem plug and nozzle that meters the amount of steam and results in instantaneous hydrolysis of the starch molecules.
